Ingredients
- 1 tablespoon olive oil
- 1 cup coarsely chopped carrot
- 8 ounces sliced fresh mushrooms
- ½ cup chopped onion
- 1 (8.5 ounce) pouch microwaveable precooked wild rice
- 1 tablespoon chopped fresh thyme
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon salt
Instructions
- Heat oil in a large nonstick skillet, over medium-high heat. Add carrot, mushrooms, and onion; cook 8 minutes or until vegetables are tender, stirring occasionally.
- Heat rice according to package directions. Add rice to pan; stir in remaining ingredients.

I also replaced the chopped fresh thyme with 1 drop of Young Living Thyme Essential Oil. I add it right before serving.

Since my children (this includes my husband) won’t eat an onion or shallot – I replace that with onion powder. I still get the flavor and they don’t pick anything out.
Pork Chops with Savory Cranberry Sauce

Ingredients
- 4 (4-ounce) boneless center-cut loin pork chops (about ¾ inch thick)
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 tablespoon canola oil
- 2 tablespoons minced shallots
- 1 cup whole-berry cranberry sauce
- 1 tablespoon balsamic vinegar
- 1 tablespoon dry sherry
- ½ teaspoon grated fresh orange rind
- ¼ teaspoon dry mustard
- 1 tablespoon chopped fresh parsley
Instructions
- Sprinkle pork with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add pork to pan; cook 2 – 3 minutes on each side or until browned. Remove pork from pan; set aside, and keep warm.
- Reduce heat to medium. Add shallots to pan; sauté 1 minute. Add cranberry sauce and next 4 ingredients to pan, stirring until cranberry sauce melts.
- Return pork to pan; cover and cook 2 minutes or until pork is done and sauce is slightly thick. Sprinkle with parsley. Serves 4 (serving size – 1 pork chop and ¼ cup sauce).

- ½ (8-ounce) sheet frozen puff pastry, thawed
- 2 cups chopped refrigerated prepared roast beef (about 11 ounces)
- 2 cups frozen mixed vegetables, thawed
- 1 cup bottled beef gravy
- ¼ teaspoon freshly ground black pepper
- Cooking spray
Instructions
- Preheat oven to 400°.
- Roll pastry to a 1/8-inch thickness on a lightly floured surface; cut pastry into 4 squares.
- Combine beef and next 3 ingredients in a large microwave-safe bowl; microwave at HIGH 2 minutes or until warm, stirring after 1 minute. Spoon mixture into 4 (10-ounce) baking dishes coated with cooking spray. Top each with a pastry square. Lightly coat tops of pastry with cooking spray. Bake at 400° for 20-22 minutes or until crust is golden brown.

This was awesome with the puff pastry shells. If you used 6 puff pastry shells then it was 9 Smart Points as well.
