Pepperoni Pizza Muffins

Pepperoni Pizza Muffins

Ingredients

  • 1/4 cup pizza sauce
  • 8 ounces shredded part-skim mozzarella cheese
  • 1 (13.75 ounce) package Pillsbury Classic Pizza Crust
  • 2 ounces Hormel Mini Pepperoni

Instructions

  1. Preheat oven to 400 degrees (or as package directed) and grease the cupcake pan.
  2. Take pizza dough and unroll. Take biscuit cutter and cut 12 circles.
  3. Place a circle in each of the cupcake molds. Try to push the dough in the molds so that it goes up the sides as well. I then reknead the dough and roll it out again and cut 12 more mini circles from a smaller biscuit cutter. Make sure to use all the dough evenly.
  4. Bake 8 minutes to set dough.
  5. Add pizza sauce, evenly divided among the 12 cupcake molds.
  6. Add mozzarella cheese, evenly divided among the 12 cupcake molds.
  7. Add mini pepperonis, evenly divided among the 12 cupcake molds. I usually get 11 mini pepperonis per cupcake mold in 2 ounces of mini pepperonis.
  8. Bake for an additional 5 minutes or until cheese melts.
