Makeover Country Fried Steak

Ingredients

1 beef top round steak (1 pound)
1/2 teaspoon salt
1/2 teaspoon garlic powder, divided
1/2 teaspoon pepper, divided
1/4 teaspoon onion powder
1/2 cup low-fat buttermilk
3/4 cup plus 4 1/2 teaspoons all-purpose flour, divided
1 tablespoon canola oil
3 teaspoons butter
1 cup fat free milk

Instructions

Cut steak into four equal pieces. Combine the salt, 1/4 teaspoon garlic powder, 1/4 teaspoon pepper and onion powder; sprinkle over steaks.
Place buttermilk and 3/4 cup flour in separate shallow bowls. Dip steaks in buttermilk, then flour.
In a large skillet, cook steaks in oil over medium heat for 3-4 minutes on each side or u til meat is no longer pink. Remove and keep warm.
In a small saucepan, melt butter. Stir in 4 1/2 teaspoons flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in remaining garlic powder and pepper. Serve with steak.

Cheesy Chicken Quesadillas

Ingredients

4 (4 ounces) chicken breasts
1 (1 ounce) package dry Spicy Ranch dressing mix
1 (8 oz) package fat free cream cheese
4 soft taco size tortillas (Mission Carb Balance)
1 cup reduced fat Mexican blend cheese, shredded
I Can't Believe It's Not Butter spray
Cooking spray

Instructions

Spray your slow cooker with non-stick cooking spray. Place your chicken breasts in the slow cooker. Sprinkle ranch dressing mix over chicken breasts and add cream cheese. Place the lid on the slow cooker and cook for 6-8 hours on LOW o 3-4 hours on HIGH. Once the chicken is cooked, shred inside slow cooker and mix all ingredients together and keep warm until ready to make quesadillas.
To make quesadillas, heat a skillet over medium heat. Spray I Can't Believe It's Not Butter spray on one side of each tortilla (one at a time as they are cooked). Top half of each tortilla with 1/4 cup cheese and 1/4 of the chicken mixture. Fold the tortilla over and press down. Cook two filled tortillas at a time (3-4 minutes each; until they are golden brown), turning once.
Serve with your favorite salsa, guacamole, and sour cream.
Makes 4 quesadillas.

Ingredients

4 slices center cut bacon
10 ounces frozen country style hash browns with onions and peppers (such as Ore-Ida Potatoes O'Brien)
6 large eggs
1/4 cup fat free milk
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup (4 ounces) reduced fat sharp cheddar cheese, shredded

Instructions

Preheat oven to 350 degrees.
Cook bacon in a 9 or 10 inch ovenproof skillet over medium heat until crisp. Remove bacon from pan, reserving drippings in pan. Crumble bacon, and set aside.
Place skillet over medium heat until hot. Add potatoes to bacon drippings in skillet; cook 8 minutes or until tender and lightly browned, stirring potatoes occasionally. Reduce heat to medium-low.
Combine eggs and next 3 ingredients in a bowl; stir well. Pour egg mixture over potatoes; cook 3 minutes or until almost set (do not stir).
Bake at 350 degrees for 3 minutes or until set. Sprinkle with bacon and cheese. Bake an additional 2 minutes or until cheese melts. Cut into wedges, and serve immediately.

1/3 cup onion-flavored Melba toast rounds, finely crushed (about 9)
1 tablespoon Parmesan cheese, grated
1 tablespoon fresh parsley, inched
1/4 teaspoon paprika
1/4 teaspoon pepper
1 1/2 pounds sea scallops
1 tablespoon margarine, melted
Cooking spray
Lemon wedges

Instructions

Preheat broiler.
Combine first 5 ingredients in a large zip-top plastic bag; set aside. Brush scallops with margarine. Add scallops to bag, and seal; shake bag to coat.
Place scallops on a broiler pan coated with cooking spray; broil 10 minutes or until done. Serve with lemon wedges.

4 (4-ounce) boneless skinless chicken breasts
2 tsp. reduced calorie margarine
1/4 cup firmly packed brown sugar
1/4 cup fresh lemon juice (about 2 lemons)
1 tsp. dry mustard
1/4 tsp. salt
1/4 tsp. pepper
4 thin lemon slices
1 Tbsp. cornstarch
1/2 cup canned reduced-sodium chicken broth
Cooking spray

Instructions

Coat a large nonstick skillet with cooking spray; place skillet over medium-high heat until hot. Add chicken, and cook 3 minutes on each side or until browned. Remove chicken from skillet.
Melt margarine in skillet over medium-low heat; stir in brown sugar and next 4 ingredients. Return chicken to skillet; cover and cook 3 minutes. Turn chicken. Top each breast with a lemon slice; cover and cook 3 additional minutes or until chicken is done. Transfer chicken and lemon slices to a serving plate; keep warm.
Combine cornstarch and broth; add to mixture in skillet. Cook; stirring constantly, 1minute or until sauce is thickened. Spoon evenly over chicken.

1 (16 ounce) can sliced peaches in 100% juice, undrained
1/4 cup orange marmalade
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/8 teaspoon pepper
6 (4 ounce) boneless skinless chicken breasts
1 teaspoon cornstarch
2 tablespoons water
Cooking spray

Instructions

Drain peaches, reserving 1/2 cup juice. Set peaches aside. Combine 1/2 cup juice, marmalade, and next 4 ingredients; set aside.
Coat a large nonstick skillet with cooking spray; place skillet over medium-high heat until hot. Add chicken, and cook 5 minutes or until browned on both sides, turning once. Add peaches and marmalade mixture to chicken; bring to a boil. Cover and cook 10 minutes or until chicken is done.
Remove chicken from skillet, and keep warm. Combine cornstarch and water; add to peach mixture. Bring to a boil; cook, stirring constantly, 1 minute or until sauce is thickened. Spoon sauce evenly over chicken.

4 (4 ounce) boneless skinless chicken breasts
8 ounce package fresh mushrooms
1 small onion, chopped
1 cup low-sodium chicken broth
12 dried apricot halves, julienned
1/4 teaspoon grated nutmeg
1 tablespoon cornstarch
2 tablespoons brandy (plain or apricot-flavored)
4 ounces dried spinach fettuccine
2 tablespoons pecan halves, coarsely chopped
Cooking spray

Instructions

Spray a large nonstick skillet with nonstick cooking spray; heat. Add the chicken and cook until browned, about 2 minutes on each side. Transfer to a plate.
While cooking chicken, boil water. Add fettuccine and cook until ready.
Spray the same skillet with more nonstick cooking spray. Add mushrooms and onion; cook, stirring as needed, until softened, about 5 minutes. Add the broth, apricots and nutmeg; cook, scraping up the browned bits, about 1 minute.
Return the chicken to the skillet. Reduce the heat and simmer, covered, until cooked through, about 6-8 minutes.
In a small bowl, combine the cornstarch and brandy; add to the chicken mixture and cook, stirring constantly, until the mixture boils and thickens, about 1 minute. Serve the fettuccine, topped with the chicken mixture; sprinkle with pecans.

1/2 cup barbecue sauce
1 1/3 cups French-fried onions, crushed
1/4 cup Parmesan cheese
1/2 teaspoon pepper
4 (4 ounce) boneless skinless chicken breasts
Cooking spray

Instructions

Place barbecue sauce in a shallow bowl. In another shallow bowl, combine the onions, cheese and pepper. Dip both sides of the chicken in barbecue sauce, then one side in onion mixture.
Place chicken, crumb side up, on a baking sheet coated with cooking spray. Bake at 400 degrees for 22-27 minutes or until meat thermometer reads 170 degrees.

8 ounce package sliced fresh mushrooms
1 teaspoon margarine
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1/4 cup port or other sweet red wine
1/4 cup no-sugar added black cherry spread
1/4 teaspoon salt
1/4 teaspoon peppe
1/8 teaspoon thyme
2 cups hot cooked long-grain rice, cooked without salt or fat
Cooking spray

Instructions

Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add fresh mushrooms, and sauté 10 minutes. Remove mushrooms from skillet, and set aside.
Melt margarine in skillet over medium-high heat. Add chicken breast, and sauté 12 minutes or until chicken is no longer pink. Add wine, and cook 3 minutes, stirring constantly. Return mushrooms to skillet; stir in black cherry spread, salt, pepper, and dried thyme. Reduce heat, and simmer, uncovered, until thoroughly heated. Serve over rice.
