Ingredients
- 1/4 cup fat free egg substitute
- 1 teaspoon water
- 1 cup all-purpose flour, divided
- 1/4 cup plain fine breadcrumbs
- 1/2 teaspoon paprika
- 1/4 teaspoon ground sage
- 1/2 teaspoon salt, divided
- 1/2 teaspoon pepper, divided
- 1/4 teaspoon garlic powder
- 4 (4 ounce) lean center cut pork loin chops, trimmed
- 4 teaspoons vegetable oil
- 1 1/2 cups reduced sodium chicken broth
- 2 1/4 cups fat free milk, divided
- Cooking spray
Instructions
- Combine egg substitute and water in a shallow dish. Combine 1/4 cup flour, breadcrumbs, paprika, sage, 1/4 teaspoon salt, 1/4 teaspoon pepper, and garlic powder in a large heavy-duty, zip-top plastic bag. Dip chops, two at a time, into egg substitute mixture; place in plastic bag with flour mixture. Seal bag, and shake until chops are coated; repeat with remaining chops.
- Heat oil in a large nonstick skillet coated with cooking spray; add chops. Cook 2 minutes on each side or until browned. Add broth; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until meat is tender. Transfer chops to a plate, reserving liquid in skillet, and keep warm.
- Combine remaining 3/4 cup flour and 3/4 cup milk, stirring until smooth; stir flour mixture into liquid in skillet with a whisk. Gradually stir in remaining 1 1/2 cups milk, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper; bring just to a simmer. Cook until thickened, stirring constantly; spoon sauce over chops.
