Baked Coconut-Breaded Tilapia

Ingredients

  • 4 (4 ounce) tilapia fillets
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup light coconut milk
  • 3/4 cup panko (Japanese breadcrumbs)
  • 1/3 cup flaked sweetened coconut
  • Cooking spray
  • 4 lime wedges

Instructions

  1. Preheat oven to 350 degrees.
  2. Sprinkle fish with salt and pepper. Place coconut milk in a shallow dish. Combine panko and coconut in another shallow dish. Dip fish in coconut milk; dredge in panko mixture. Coat both sides of fish with cooking spray. Place fish on a wire rack on a baking sheet. Discard any remaining coconut milk and panko mixture. Bake at 450 degrees for 12 minutes.
  3. Increase oven temperature to broil.
  4. Broil 2 minutes or until fish flakes easily when tested with a fork or until desired degree of oneness. Serve with lime wedges.
