Greek Feta Chicken

Ingredients

  • 1 (8 ounce) carton plain non-fat Greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon pepper
  • 1 large garlic clove, minced
  • 4 (6 ounce) boneless skinless chicken breasts
  • 1/4 cup (2 ounces) crumbled feta cheese
  • 1 tablespoon chopped fresh parsley
  • Cooking spray

Instructions

  1. Combine first 6 ingredients in a large zip-top plastic bag; add chicken. Seal bag, and shake until chicken is well coated. Marinate in refrigerator 30 minutes.
  2. Preheat broiler.
  3. Remove chicken from bag, reserving marinade. Place chicken on a broiler pan coated with cooking spray. Broil 7 minutes. Turn chicken over. Spoon reserved marinade over chicken; top with feta cheese. Broil 7 minutes or until chicken is done. Sprinkle with parsley.
