Saucy Lemon Chicken

Ingredients

  • 4 (4-ounce) boneless skinless chicken breasts
  • 2 tsp. reduced calorie margarine
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tsp. dry mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 4 thin lemon slices
  • 1 Tbsp. cornstarch
  • 1/2 cup canned reduced-sodium chicken broth
  • Cooking spray

Instructions

  1. Coat a large nonstick skillet with cooking spray; place skillet over medium-high heat until hot. Add chicken, and cook 3 minutes on each side or until browned. Remove chicken from skillet.
  2. Melt margarine in skillet over medium-low heat; stir in brown sugar and next 4 ingredients. Return chicken to skillet; cover and cook 3 minutes. Turn chicken. Top each breast with a lemon slice; cover and cook 3 additional minutes or until chicken is done. Transfer chicken and lemon slices to a serving plate; keep warm.
  3. Combine cornstarch and broth; add to mixture in skillet. Cook; stirring constantly, 1minute or until sauce is thickened. Spoon evenly over chicken.
