Weight Watchers 5 SmartPoints; Weight Watchers 4 Freestyle Points
Ingredients
- 4 (4-ounce) boneless skinless chicken breasts
- 2 tsp. reduced calorie margarine
- 1/4 cup firmly packed brown sugar
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tsp. dry mustard
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 thin lemon slices
- 1 Tbsp. cornstarch
- 1/2 cup canned reduced-sodium chicken broth
- Cooking spray
Instructions
- Coat a large nonstick skillet with cooking spray; place skillet over medium-high heat until hot. Add chicken, and cook 3 minutes on each side or until browned. Remove chicken from skillet.
- Melt margarine in skillet over medium-low heat; stir in brown sugar and next 4 ingredients. Return chicken to skillet; cover and cook 3 minutes. Turn chicken. Top each breast with a lemon slice; cover and cook 3 additional minutes or until chicken is done. Transfer chicken and lemon slices to a serving plate; keep warm.
- Combine cornstarch and broth; add to mixture in skillet. Cook; stirring constantly, 1minute or until sauce is thickened. Spoon evenly over chicken.
