Chicken in Port

Serving Size: 3/4 cup chicken and 1/2 cup rice

Ingredients

  • 8 ounce package sliced fresh mushrooms
  • 1 teaspoon margarine
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 1/4 cup port or other sweet red wine
  • 1/4 cup no-sugar added black cherry spread
  • 1/4 teaspoon salt
  • 1/4 teaspoon peppe
  • 1/8 teaspoon thyme
  • 2 cups hot cooked long-grain rice, cooked without salt or fat
  • Cooking spray

Instructions

  1. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add fresh mushrooms, and sauté 10 minutes. Remove mushrooms from skillet, and set aside.
  2. Melt margarine in skillet over medium-high heat. Add chicken breast, and sauté 12 minutes or until chicken is no longer pink. Add wine, and cook 3 minutes, stirring constantly. Return mushrooms to skillet; stir in black cherry spread, salt, pepper, and dried thyme. Reduce heat, and simmer, uncovered, until thoroughly heated. Serve over rice.
