Ingredients
- 1 pound ground sirloin
- 1 package of taco seasoning
- 3/4 cup water
- 1 (15 ounce) can black beans, drained
- 1 (15 ounce) can kernel corn, drained
- 1 (10.75 ounce) can of reduced fat cream of chicken soup, undiluted
- 12 corn tortillas
- 8 ounces reduced fat sharp Cheddar cheese
Instructions
- Preheat oven to 350 degrees.
- Cook beef in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Drain well. Add water and taco seasoning; mix well. Combine seasoned beef, black beans, kernel corn, and cream of chicken soup; mix well.
- Spray 13x9 baking dish with cooking spray.
- Layer 6 corn tortillas on bottom of dish (they will be overlapping). Spoon half of taco meat mixture onto the corn tortillas. Then layer the next 6 corn tortillas on top of taco meat mixture in baking dish. Top with remaining half of taco meat mixture. Add cheddar cheese on top. Bake at 350 degrees for 20 minutes or until thoroughly heated and cheese is melted.

- 7.25 ounces uncooked spaghetti
- 1 pound ground sirloin
- 1 (8 ounce) package sliced cremini mushrooms
- 24 ounce jar lower-sodium marinara sauce
- 1/2 teaspoon salt
- 8 ounces pre-shredded reduced-fat Italian-blend cheese (about 2 cups)
- Basil leaves (optional)
- Cooking spray
Instructions
- Preheat oven to 350 degrees.
- Cook pasta according to package directions, omitting fat and salt; drain.
- While pasta cooks, cook beef and mushrooms in a large nonstick skillet over medium-high heat 8 minutes or until beef is browned, stirring to crumble. Drain beef mixture, and return to pan. Stir in whole jar of marinara sauce and 1/2 teaspoon salt; cook 2 minutes or until thoroughly heated, stirring frequently.
- Place pasta in a 13x9-inch glass or ceramic baking dish coated with cooking spray. Spoon beef mixture over pasta mixture; sprinkle with cheese.
- Bake, uncovered, at 350 degrees for 15 minutes or until cheese melts and sauce is bubbly. Garnish with basil leaves, if desired.
