Weight Watchers 6 SmartPoints
Ingredients
- 4 slices center cut bacon
- 10 ounces frozen country style hash browns with onions and peppers (such as Ore-Ida Potatoes O'Brien)
- 6 large eggs
- 1/4 cup fat free milk
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup (4 ounces) reduced fat sharp cheddar cheese, shredded
Instructions
- Preheat oven to 350 degrees.
- Cook bacon in a 9 or 10 inch ovenproof skillet over medium heat until crisp. Remove bacon from pan, reserving drippings in pan. Crumble bacon, and set aside.
- Place skillet over medium heat until hot. Add potatoes to bacon drippings in skillet; cook 8 minutes or until tender and lightly browned, stirring potatoes occasionally. Reduce heat to medium-low.
- Combine eggs and next 3 ingredients in a bowl; stir well. Pour egg mixture over potatoes; cook 3 minutes or until almost set (do not stir).
- Bake at 350 degrees for 3 minutes or until set. Sprinkle with bacon and cheese. Bake an additional 2 minutes or until cheese melts. Cut into wedges, and serve immediately.
