Country Breakfast Pie

Ingredients

  • 4 slices center cut bacon
  • 10 ounces frozen country style hash browns with onions and peppers (such as Ore-Ida Potatoes O'Brien)
  • 6 large eggs
  • 1/4 cup fat free milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup (4 ounces) reduced fat sharp cheddar cheese, shredded

Instructions

  1. Preheat oven to 350 degrees.
  2. Cook bacon in a 9 or 10 inch ovenproof skillet over medium heat until crisp. Remove bacon from pan, reserving drippings in pan. Crumble bacon, and set aside.
  3. Place skillet over medium heat until hot. Add potatoes to bacon drippings in skillet; cook 8 minutes or until tender and lightly browned, stirring potatoes occasionally. Reduce heat to medium-low.
  4. Combine eggs and next 3 ingredients in a bowl; stir well. Pour egg mixture over potatoes; cook 3 minutes or until almost set (do not stir).
  5. Bake at 350 degrees for 3 minutes or until set. Sprinkle with bacon and cheese. Bake an additional 2 minutes or until cheese melts. Cut into wedges, and serve immediately.
