Chipotle Turkey Soft Tacos
Ingredients
- 1 pound 99% fat free ground turkey breast
- 1 1/2 teaspoons chipotle chile powder
- 2 teaspoons onion powder (or 2/3 cup chopped onion)
- 2 poblano chiles, seeded and chopped (about 1 cup)
- 2 tablespoons water
- 1/4 teaspoon salt
- 1 (15 ounce) can black beans, rinsed and drained
- 8 (6 inch) corn tortillas
- 1/2 cup refrigerated fresh salsa
- 2 ounces crumbled queso fresco (about 1/2 cup)
- Cooking spray
- Additional refrigerated fresh salsa (optional)
- Lime wedges (optional)
- Cilantro sprigs (optional)
Instructions
- Cook turkey and chile powder in a large nonstick skillet over medium-high heat 7 to 8 minutes or until browned, stirring to crumble turkey. Drain well.
- While turkey mixture cooks, heat a large skillet over medium heat. Coat pan with cooking spray. Add onion powder (or onion) and chiles; sauté 5 minutes or until tender. Stir in 2 tablespoons water, salt, and black beans; cook 2 minutes or until thoroughly heated. Remove from heat; mash bean mixture to desired consistency.
- Warm tortillas according to package directions. Spoon about 1/4 cup turkey mixture and about 1/4 cup bean mixture down center of each tortilla. Top each with 1 tablespoon salsa and about 1 tablespoon queso fresco. Serve with additional salsa, lime wedges, and cilantro, if desired.
Notes
I used onion powder instead of onion and also didn't add poblano peppers. When I ran the recipe through recipe builder it came up with 8 Points Plus for 2 tacos.
