Cheesy Chicken Quesadillas

Ingredients

  • 4 (4 ounces) chicken breasts
  • 1 (1 ounce) package dry Spicy Ranch dressing mix
  • 1 (8 oz) package fat free cream cheese
  • 4 soft taco size tortillas (Mission Carb Balance)
  • 1 cup reduced fat Mexican blend cheese, shredded
  • I Can't Believe It's Not Butter spray
  • Cooking spray

Instructions

  1. Spray your slow cooker with non-stick cooking spray. Place your chicken breasts in the slow cooker. Sprinkle ranch dressing mix over chicken breasts and add cream cheese. Place the lid on the slow cooker and cook for 6-8 hours on LOW o 3-4 hours on HIGH. Once the chicken is cooked, shred inside slow cooker and mix all ingredients together and keep warm until ready to make quesadillas.
  2. To make quesadillas, heat a skillet over medium heat. Spray I Can't Believe It's Not Butter spray on one side of each tortilla (one at a time as they are cooked). Top half of each tortilla with 1/4 cup cheese and 1/4 of the chicken mixture. Fold the tortilla over and press down. Cook two filled tortillas at a time (3-4 minutes each; until they are golden brown), turning once.
  3. Serve with your favorite salsa, guacamole, and sour cream.
  4. Makes 4 quesadillas.
