Easy Chicken Fajitas

Ingredients
- 2 medium green or red bell peppers or a combination
- 2 medium onions
- 3 garlic cloves, minced
- 1½ lbs boneless skinless chicken breasts
- 2 tbsp Chipotle Rub (or preferred seasoning)
- 1 lime
- 12 (6-7") flour tortillas
- 1½ cups (6 oz) reduced fat cheddar cheese, shredded
- ½ cup fat free sour cream
- ½ cup prepared salsa
Instructions
- Cut the bell peppers lengthwise into 1/4" strips and thinly slice the onions lengthwise. Place the vegetables in a (Pampered Chef) Deep Covered Baker. Place the chicken over the vegetables and sprinkle with the rub. Add the minced garlic and squeeze 1/2 lime over the chicken to get the juice.
- Microwave, covered, on HIGH for 10-12 minutes or until the internal temperature reaches 165°F/74°C in the thickest part of the chicken and the juices run clear. Cut the chicken into strips.
- Microwave the tortillas, covered, on HIGH for about 30 seconds or until warm. To serve the fajitas, spoon the chicken and vegetable mixture onto the centers of the tortillas. Serve immediately with cheese, sour cream, and salsa.
