Easy Chili Mac

Ingredients

  • 1/2 cup uncooked elbow macaroni (or 2 ounces)
  • 1 pound ground sirloin
  • 1/4 cup refrigerated chopped onion (or 1 teaspoon onion powder)
  • 1 (15 ounce) can vegetarian chili with beans
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 ounces reduced fat shredded sharp cheddar cheese (about 1/2 cup)
  • Cooking spray

Instructions

  1. Cook pasta according to package directions, omitting salt and fat. Drain and keep warm.
  2. While pasta cooks, heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add ground sirloin and onion (or onion powder); cook 4 minutes or until onion is tender, stirring to crumble beef.
  3. Add chili, salt, and pepper to beef mixture. Bring to a simmer. cook 2 minutes or until beef is done. Stir in pasta. Spoon beef mixture into 4 bowls; top with cheese, and serve immediately.

Notes

This recipe was originally Easy Turkey Chili Mac, but I substituted ground sirloin for the ground turkey breast. If you use, 3/4 pound ground turkey breast in place of the 1 pound ground sirloin, then it would be 6 Points Plus for a serving.
