Easy Mexican Casserole

Ingredients

  • 1 pound ground sirloin
  • 1 package of taco seasoning
  • 3/4 cup water
  • 1 (15 ounce) can black beans, drained
  • 1 (15 ounce) can kernel corn, drained
  • 1 (10.75 ounce) can of reduced fat cream of chicken soup, undiluted
  • 12 corn tortillas
  • 8 ounces reduced fat sharp Cheddar cheese

Instructions

  1. Preheat oven to 350 degrees.
  2. Cook beef in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Drain well. Add water and taco seasoning; mix well. Combine seasoned beef, black beans, kernel corn, and cream of chicken soup; mix well.
  3. Spray 13x9 baking dish with cooking spray.
  4. Layer 6 corn tortillas on bottom of dish (they will be overlapping). Spoon half of taco meat mixture onto the corn tortillas. Then layer the next 6 corn tortillas on top of taco meat mixture in baking dish. Top with remaining half of taco meat mixture. Add cheddar cheese on top. Bake at 350 degrees for 20 minutes or until thoroughly heated and cheese is melted.
