Glazed Salmon with Pineapple-Cranberry Salsa

Ingredients

  • 1 cup crushed pineapple, drained
  • 1/2 cup sweetened dried cranberries (Craisins)
  • 2 tablespoons red bell pepper, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon red onion, chopped
  • 1/2 tablespoon jalapeƱo pepper, minced and seeded
  • 1/2 teaspoon fresh lime rind, grated
  • 1/2 tablespoon fresh lime juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground white pepper
  • 1 tablespoon honey
  • 1 tablespoon hoisin sauce
  • 4 (6 ounce) salmon fillets
  • Cooking spray

Instructions

  1. Preheat broiler.
  2. Combine first 10 ingredients in a medium bowl; cover and chill 2 hours.
  3. Combine honey and hoisin sauce in a small bowl. Place fish, skin sides down, on a baking sheet coated with cooking spray. Brush with 1 tablespoon hoisin mixture. Broil 5 minutes or until glaze begins to lightly brown.
  4. Brush fish with remaining tablespoon hoisin mixture, and broil an additional 7-9 minutes or until fish flakes easily when tested with a fork. Serve with salsa.
