Glazed Salmon with Pineapple-Cranberry Salsa

Ingredients
- 1 cup crushed pineapple, drained
- 1/2 cup sweetened dried cranberries (Craisins)
- 2 tablespoons red bell pepper, chopped
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon red onion, chopped
- 1/2 tablespoon jalapeƱo pepper, minced and seeded
- 1/2 teaspoon fresh lime rind, grated
- 1/2 tablespoon fresh lime juice
- 1/8 teaspoon salt
- 1/8 teaspoon ground white pepper
- 1 tablespoon honey
- 1 tablespoon hoisin sauce
- 4 (6 ounce) salmon fillets
- Cooking spray
Instructions
- Preheat broiler.
- Combine first 10 ingredients in a medium bowl; cover and chill 2 hours.
- Combine honey and hoisin sauce in a small bowl. Place fish, skin sides down, on a baking sheet coated with cooking spray. Brush with 1 tablespoon hoisin mixture. Broil 5 minutes or until glaze begins to lightly brown.
- Brush fish with remaining tablespoon hoisin mixture, and broil an additional 7-9 minutes or until fish flakes easily when tested with a fork. Serve with salsa.
