Individual Beef Potpies

Ingredients

  • ½ (8-ounce) sheet frozen puff pastry, thawed
  • 2 cups chopped refrigerated prepared roast beef (about 11 ounces)
  • 2 cups frozen mixed vegetables, thawed
  • 1 cup bottled beef gravy
  • ¼ teaspoon freshly ground black pepper
  • Cooking spray

Instructions

  1. Preheat oven to 400°.
  2. Roll pastry to a 1/8-inch thickness on a lightly floured surface; cut pastry into 4 squares.
  3. Combine beef and next 3 ingredients in a large microwave-safe bowl; microwave at HIGH 2 minutes or until warm, stirring after 1 minute. Spoon mixture into 4 (10-ounce) baking dishes coated with cooking spray. Top each with a pastry square. Lightly coat tops of pastry with cooking spray. Bake at 400° for 20-22 minutes or until crust is golden brown.

This was awesome with the puff pastry shells.  If you used 6 puff pastry shells then it was 9 Smart Points as well.
