Individual Shepherd’s Pie

Ingredients

  • 1 pound ground sirloin
  • 12 ounces frozen baby vegetable mix
  • 1 (14.5 ounce) can diced tomatoes with basil, garlic, and oregano, I drained
  • 1 (8 ounce) can unsalted tomato sauce
  • 1 teaspoon garlic powder
  • 2 cups refrigerated country-style mashed potatoes
  • 1/8 teaspoon freshly ground black pepper
  • Cooking spray

Instructions

  1. Cook beef in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Add vegetable mix, tomatoes, garlic powder, and tomato sauce. Cook 5 minutes or until mixture is slightly thick and thoroughly heated, stirring occasionally.
  2. While beef mixture cooks, place potatoes in a microwave-safe bowl. Cover with plastic wrap; vent. Microwave at high 2 minutes or until thoroughly heated
  3. Preheat broiler.
  4. Divide beef mixture among 4 (8 ounce) broiler-safe ramekins coated with cooking spray. Top with potatoes; sprinkle with pepper. Place ramekins on a baking sheet. Broil 2 to 3 minutes or until potatoes are golden.
