Pork Chops with Savory Cranberry Sauce

Ingredients

  • 4 (4-ounce) boneless center-cut loin pork chops (about ¾ inch thick)
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon canola oil
  • 2 tablespoons minced shallots
  • 1 cup whole-berry cranberry sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dry sherry
  • ½ teaspoon grated fresh orange rind
  • ¼ teaspoon dry mustard
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Sprinkle pork with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add pork to pan; cook 2 – 3 minutes on each side or until browned. Remove pork from pan; set aside, and keep warm.
  2. Reduce heat to medium. Add shallots to pan; sauté 1 minute. Add cranberry sauce and next 4 ingredients to pan, stirring until cranberry sauce melts.
  3. Return pork to pan; cover and cook 2 minutes or until pork is done and sauce is slightly thick. Sprinkle with parsley. Serves 4 (serving size – 1 pork chop and ¼ cup sauce).

I also replaced the grated fresh orange rind with 2 drops of Young Living Orange Essential Oil. I add it right before I put the pork back into the pan.

Since my children (this includes my husband) won’t eat an onion or shallot – I replace that with onion powder.  I still get the flavor and they don’t pick anything out.
