Roasted Potatoes

Ingredients

  • 24 ounces red potatoes, diced
  • 4 teaspoons high heat safflower oil
  • 2 teaspoons garlic and herb rub (or other preferred seasoning)

Instructions

  1. Heat oven to 400 degrees.
  2. Wash potatoes and dice into 1/2 inch pieces.
  3. In a small bowl, add diced potatoes, oil, and rub/seasoning. Mix ingredients together.
  4. Place potatoes on a baking sheet and cook in oven for 15 minutes.
  5. Check and stir potatoes. Cook another 15 minutes or until desired crispness.
