Roasted Potatoes

Ingredients
- 24 ounces red potatoes, diced
- 4 teaspoons high heat safflower oil
- 2 teaspoons garlic and herb rub (or other preferred seasoning)
Instructions
- Heat oven to 400 degrees.
- Wash potatoes and dice into 1/2 inch pieces.
- In a small bowl, add diced potatoes, oil, and rub/seasoning. Mix ingredients together.
- Place potatoes on a baking sheet and cook in oven for 15 minutes.
- Check and stir potatoes. Cook another 15 minutes or until desired crispness.
