Skinny Alice Springs Chicken

Ingredients

  • 4 (1 pound total) thinly sliced boneless, skinless chicken breasts
  • 1/2 teaspoon seasoning salt
  • 4 slices center cut bacon
  • 1/4 cup yellow mustard
  • 1/4 cup honey
  • 2 tablespoons fat free mayonnaise
  • 2 tablespoons non-fat plain Greek yogurt
  • 1/2 tablespoon dried onion flakes or 1 tablespoon scallions, chopped
  • 8 ounces sliced fresh mushrooms
  • 1/4 cup reduced fat cheddar cheese, shredded
  • Cooking spray

Instructions

  1. Preheat oven to 350 degrees.
  2. Coat a 13x9 rectangular baking dish with cooking spray.
  3. Place chicken breasts in baking dish and sprinkle with seasoning salt.
  4. Line a microwave safe plate with paper towels. Place bacon on top and cover with more paper towels. Cook for about 4 minutes until bacon is crisp. Blot well, cool slightly, and crumble. Set aside.
  5. Add mushrooms to a small bowl and cook in the microwave for 2 minutes to soften. Set aside.
  6. In a small bowl, mix together mustard, honey, mayonnaise, yogurt, and dried onion flakes or scallions.
  7. Spread all the honey mustard sauce over each chicken breast, then layer each piece with the mushrooms, sprinkle each with crumbled bacon. Finally, top each with 1 tablespoon shredded cheese.
  8. Bake at 350 degrees for 15 minutes or until cheese is melted and chicken is done.
