Skinny Alice Springs Chicken

Ingredients
- 4 (1 pound total) thinly sliced boneless, skinless chicken breasts
- 1/2 teaspoon seasoning salt
- 4 slices center cut bacon
- 1/4 cup yellow mustard
- 1/4 cup honey
- 2 tablespoons fat free mayonnaise
- 2 tablespoons non-fat plain Greek yogurt
- 1/2 tablespoon dried onion flakes or 1 tablespoon scallions, chopped
- 8 ounces sliced fresh mushrooms
- 1/4 cup reduced fat cheddar cheese, shredded
- Cooking spray
Instructions
- Preheat oven to 350 degrees.
- Coat a 13x9 rectangular baking dish with cooking spray.
- Place chicken breasts in baking dish and sprinkle with seasoning salt.
- Line a microwave safe plate with paper towels. Place bacon on top and cover with more paper towels. Cook for about 4 minutes until bacon is crisp. Blot well, cool slightly, and crumble. Set aside.
- Add mushrooms to a small bowl and cook in the microwave for 2 minutes to soften. Set aside.
- In a small bowl, mix together mustard, honey, mayonnaise, yogurt, and dried onion flakes or scallions.
- Spread all the honey mustard sauce over each chicken breast, then layer each piece with the mushrooms, sprinkle each with crumbled bacon. Finally, top each with 1 tablespoon shredded cheese.
- Bake at 350 degrees for 15 minutes or until cheese is melted and chicken is done.
